Far breton
Far breton is a traditional dessert from Brittany, France — a dense, custard-like baked pudding made with eggs, milk, sugar, and flour, most often studded with prunes. It sits somewhere between a flan and a cake, with a simple, comforting flavor that reflects Brittany’s rustic culinary roots. For a gluten-free version, wheat flour can be replaced with buckwheat flour, a grain closely associated with Breton cuisine.

Ingredients
- 200 g Flour, Wheat flour can be replaced by buckwheat flour
- 150 g Sugar
- 4 Eggs
- 2 tsp Vanilla sugar, previously made in a jar with sugar and a vanilla bean
- 750 ml Milk
- 20 Dry prune
Instructions
- Prepare the batter by mixing the flour, milk, sugar, eggs, and vanilla sugar.
- Let rest for one hour.
- Preheat the oven to 200°C. Melt a knob of butter in a dish (preferably earthenware), then spread the fat evenly over the bottom and sides. Pour the batter into the dish.
- Add the prunes (previously rolled in flour so they don't sink to the bottom).
- Bake for half an hour in the oven at 200°C. Then turn off the oven and leave for another half hour.
- Important: once the dish is in the oven, do not open the oven door for one hour.
